Method

Prepare the Filling

    Chop the Prawns

    In a large bowl, chop the jumbo prawns into small pieces, ensuring they are not pureed but still have texture.

    Prepare Pancetta

    Finely chop the pancetta and add it to the bowl with the prawns.

    Add Aromatics

    Chop the scallions finely, and add them along with the grated ginger, minced garlic, soy sauce, sesame oil, salt, and black pepper to the bowl. Mix well until all ingredients are combined.

Assemble the Wontons

    Prepare Wonton Wrappers

    Lay out the wonton wrappers on a clean, dry surface. Keep a small bowl of water nearby.

    Fill the Wontons

    Place a teaspoon of the prawn filling in the center of each wonton wrapper. Dip your finger in water and moisten the edges of the wrapper.

    Seal the Wontons

    Fold the wrapper in half to form a triangle, pressing the edges to seal. You can also pleat the edges for a decorative touch.

Cooking the Wontons

    Boil the Wontons

    Bring a large pot of water to a gentle boil. Add the wontons in batches, making sure not to overcrowd the pot. Cook for 4-5 minutes or until they float to the surface.

    Remove and Drain

    Using a slotted spoon, remove the wontons and place them on a plate lined with paper towels to drain excess water.

Prepare the Dipping Sauce

    Mix the Sauce

    In a small bowl, combine soy sauce, rice vinegar, and chili oil. Stir well to mix all ingredients thoroughly.

    Garnish

    Sprinkle sesame seeds and finely chopped scallions on top of the dipping sauce for extra flavor.
