Make the Dough
In a large mixing bowl, combine the whole wheat flour and salt. Gradually add water while kneading to form a soft, pliable dough. If desired, add the oil to enhance the texture. Knead for about 5-7 minutes until the dough is smooth. Cover it with a damp cloth and let it rest for 20-30 minutes.

Roll and Cook the Roti
After the dough has rested, divide it into equal portions (about 8-10). Roll each portion into a ball and flatten it slightly. Dust with flour and roll out into a thin circle. Heat a tawa or flat skillet over medium heat. Once hot, place the rolled roti on the tawa. Cook for about 30 seconds until small bubbles start to form. Flip it over and cook for another 30 seconds. Press gently with a spatula to help it puff up. Cook until both sides have golden brown spots. Serve hot with ghee or your choice of curry.
