Sauté the Base

In a large pot, heat vegetable oil over medium heat. Add mustard seeds and allow them to splutter. Then, add the chopped onions and sauté until they turn golden brown.

Add Aromatics

Stir in the minced garlic, ginger, and green chilies, and sauté for another 2-3 minutes until fragrant.

Cook the Lamb

Add the cubed lamb to the pot and cook for about 5-7 minutes, allowing it to brown slightly.

Spice it Up

Add the turmeric powder, coriander powder, and salt. Mix well and cook for another 2 minutes.

Add Coconut Milk

Pour in the coconut milk and add the curry leaves. Stir everything together and bring to a boil.

Simmer

Reduce the heat to low, cover the pot, and let it simmer for about 45 minutes, or until the lamb is tender.

Finish the Dish

Once the lamb is tender, stir in the garam masala and adjust seasoning if needed. Garnish with chopped fresh coriander before serving.
