Mixing Ingredients

In a large bowl, combine all-purpose flour and salt. Slowly add water and oil while mixing until a dough forms.

Kneading

Knead the dough for about 5-7 minutes until it becomes soft and elastic. Cover it with a damp cloth and let it rest for 30 minutes.

Mashing Potatoes

In a bowl, mash the cooked potatoes. Add finely chopped onion, green chilies, cilantro, garam masala, and salt. Mix well.

Rolling the Parathas

Divide the dough into equal portions. Take one portion, roll it into a small circle, place a spoonful of filling in the center, and fold the edges over the filling to seal. Roll it out gently into a flat circle.

Cooking

Heat a skillet over medium heat and add ghee or oil. Cook the paratha for 2-3 minutes on each side until golden brown and cooked through.
