Making the Rasmalai

    Prepare the Chenna

    Boil the milk in a large pot. Once it starts boiling, add lemon juice gradually, stirring gently until the milk curdles. Remove from heat and let it sit for 10 minutes. Strain the curdled milk through a muslin cloth to get the chenna. Rinse under cold water and squeeze out excess water.

    Form the Rasmalai

    Knead the chenna until smooth and form small balls (about the size of a walnut).

    Prepare Sugar Syrup

    In a separate pot, combine water and sugar. Bring to a boil and add the formed chenna balls. Cook for about 10-12 minutes until they double in size. Remove from heat.

Making the Milk Syrup

    Infuse Saffron

    In a saucepan, combine the milk, sugar, saffron threads, and cardamom powder. Bring to a gentle simmer and let it cook for 10-15 minutes until slightly thickened.

    Once the milk syrup is ready, add the cooked Rasmalai balls to the syrup and let them soak for at least 1 hour.
