    Clean the local mushrooms thoroughly and chop them into bite-sized pieces.

    In a large pan, heat the coconut oil over medium heat. Add the chopped onion and sauté until soft and translucent. Stir in the grated ginger, minced garlic, and slit green chilies. Sauté for 2-3 minutes until fragrant.

    Add the curry leaves to the pan and sauté for another minute, allowing their flavor to infuse the oil.

    Cook the Mushrooms

    Add the chopped mushrooms to the pan and cook for about 5-7 minutes until they start to soften.

    Stir in the turmeric powder, coriander powder, and salt. Mix well to coat the mushrooms in the spices.
