Preparation

    Cook the Rice

    Rinse the basmati rice under cold water until the water runs clear. Add 4 cups of water and a pinch of salt to the rice in a pot and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes or until the rice is fluffy.

    Prepare the Paneer Dish

    Cut the paneer into cubes. Heat a tablespoon of oil in a pan, add cumin seeds and let them splutter. Add the paneer cubes and sauté until golden. Add turmeric, salt, and red chili powder to taste. Mix well and set aside.

    Cook Mixed Vegetables

    In the same pan, add a bit more oil if needed. Add the mixed vegetables and sauté for 5-7 minutes until tender. Sprinkle with garam masala and adjust seasoning.

    Prepare Chickpeas

    In another pan, heat a tablespoon of oil, add cooked chickpeas, and season with salt and red chili powder. Cook for about 5 minutes until heated through.

Serving

    Assemble the Thali

    On a large plate or thali, serve a scoop of basmati rice, a portion of paneer, mixed vegetables, and chickpeas. Add a side of yogurt, a spoonful of pickle, and a couple of pieces of naan or roti.
