    Prepare the Duck

    In a large pot, heat coconut oil over medium heat. Add the sliced onions and sauté until golden brown.

    Add Aromatics

    Stir in the ginger-garlic paste and green chilies. Cook for another 2 minutes until fragrant.

    Combine Duck and Spices

    Add the duck pieces to the pot and season with turmeric powder, red chili powder, and salt. Sear the duck pieces until they are browned on all sides.

    Add Tomato and Coconut Milk

    Add the chopped tomatoes and cook until they soften. Pour in the coconut milk and stir to combine.

    Simmer the Mappas

    Cover the pot and let the duck simmer on low heat for about 1.5 to 2 hours, or until the duck is tender and the sauce has thickened.

    Finish with Garam Masala

    Once cooked, stir in the garam masala and adjust salt if needed. Garnish with chopped coriander leaves before serving.
