Prepare the Beef
Cut the beef into bite-sized pieces and set aside.

Add Ginger, Garlic, and Chilies
Stir in the grated ginger, minced garlic, and slit green chilies. Cook for another 2-3 minutes until fragrant.

Incorporate Tomatoes and Spices
Add the chopped tomatoes, turmeric, coriander powder, cumin powder, and black pepper. Cook until the tomatoes soften.

Add Beef and Water
Add the beef pieces to the pot and stir well to coat them with the spice mixture. Pour in the water and season with salt.

Slow Cook
Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 1.5 to 2 hours, or until the beef is tender.

Finish with Coconut Milk and Curry Leaves
Once the beef is tender, stir in the coconut milk and add the curry leaves. Let it simmer for an additional 10-15 minutes.

Remove from heat and let it rest for a few minutes before serving. Pair with steamed rice or flatbreads.
