Prepare the Jackfruit
In a large pot, add the chopped jackfruit and water. Cook on medium heat until the jackfruit is soft and tender, about 10-15 minutes.

Blend
Once the jackfruit is cooked, allow it to cool slightly and then blend it to a smooth puree using a blender.

Combine with Coconut Milk
In the same pot, add the coconut milk and jaggery to the jackfruit puree. Stir well and cook on low heat for another 5 minutes until the jaggery is dissolved.

Add Spices and Seasoning
Stir in the cardamom powder and a pinch of salt. Mix well and cook for an additional 2 minutes.

Prepare the Toppings
In a small pan, heat ghee and add cashews and raisins. Fry until golden brown, then pour over the payasam.
