Prepare the Ingredients
Gather all the ingredients and chop the onion, ginger, and green chilies. Set aside.

Cook the Spices
In a large pan, heat coconut oil over medium heat. Add mustard seeds and fenugreek seeds. When they start to splutter, add curry leaves and sauté for a few seconds.

Add Ginger and Spices
Stir in the grated ginger, turmeric powder, and kokum pieces. Cook for 2 minutes to allow the flavors to meld.

Add Coconut Milk
Pour in the coconut milk and stir well. Bring the mixture to a gentle simmer.

Cook the Salmon
Carefully add the salmon fillets skin side down. Cover the pan and cook for about 8-10 minutes, or until the salmon is cooked through and flakes easily.

Season and Serve
Taste and adjust salt if necessary. Remove from heat and serve hot with steamed rice or appam.
