Prepare Vegetables
Wash and chop the eggplant into bite-sized cubes. Trim the ends of the green beans and cut them in half. Core and slice the mixed peppers into strips.

Add Curry Paste
Add the green curry paste to the hot oil and sauté for about 1-2 minutes, stirring constantly until fragrant.

Add Coconut Milk
Pour in the coconut milk and stir well to combine with the curry paste. Bring to a gentle simmer.

Cook Vegetables
Add the chopped eggplant, green beans, and mixed peppers to the saucepan. Stir to coat the vegetables in the curry sauce.

Simmer
Allow the mixture to simmer for about 10-15 minutes, or until the vegetables are tender. Stir occasionally.

Add Basil and Seasoning
Once the vegetables are cooked, add the fresh basil leaves and salt to taste. Stir well.

Remove from heat and serve hot with steamed rice or noodles.
