Preparation

    Prepare the Soup Base

    In a large pot, add 4 cups of water and bring it to a boil.

    Prepare Lemongrass

    Trim the ends of the lemongrass and smash the stalks with the back of a knife to release the flavor. Add them to the boiling water.

    Prepare Galangal

    Slice the galangal into thin rounds and add them to the pot.

    Add Kaffir Lime Leaves

    Tear the kaffir lime leaves into smaller pieces and add them to the pot.

    Season the Broth

    Stir in the fish sauce and let the broth simmer for 10-15 minutes to allow the flavors to meld.

Cooking

    Add the Vegetables

    While the broth is simmering, slice the mushrooms and tomatoes. After 15 minutes, add them to the pot.

    Optional Add-ins

    If using shrimp, peel and devein them. Add the shrimp and the Thai bird's eye chili to the pot at this stage.

    Finish the Soup

    Simmer for an additional 5-7 minutes until the shrimp are cooked through and the mushrooms are tender.

Serving

    Garnish and Serve

    Remove the pot from heat. Stir in the lime juice and garnish with chopped cilantro. Serve hot.
