1. Prepare the seafood

In a large bowl, combine the shrimp, scallops, and mussels. Rinse them under cold water and set aside.

2. Chop vegetables

Dice the red bell pepper, slice the zucchini, and halve the cherry tomatoes. Set aside along with the minced garlic.

3. Sauté the vegetables

In a large skillet over medium heat, heat the olive oil. Add the minced garlic and red bell pepper. Sauté for 2-3 minutes until fragrant.

4. Add zucchini and tomatoes

Stir in the sliced zucchini and halved cherry tomatoes. Cook for an additional 3-4 minutes, stirring occasionally.

5. Cook the seafood

Add the shrimp, scallops, and mussels to the skillet. Pour in the white wine and lemon juice. Season with salt and black pepper. Cover and cook for about 5-7 minutes, or until the mussels have opened and the shrimp are pink.

6. Garnish and serve

Remove from heat, sprinkle with fresh parsley, and serve hot.
