1. Marinate the Chicken

In a large bowl, combine the chicken thighs, tamarind paste, soy sauce, brown sugar, salt, and black pepper. Mix well to coat the chicken evenly. Cover and let marinate in the refrigerator for at least 30 minutes.

Finely chop the garlic, ginger, and green chilies. Set aside for later use.

Reduce the heat to low and let the mixture simmer for 10-15 minutes, allowing the flavors to meld together and the sauce to thicken slightly.

Once the sauce has thickened, remove from heat. Serve the Tum Pricka hot, garnished with fresh cilantro and lime wedges on the side.
