For Som Tum (Green Papaya Salad)

For Gai Yang (Grilled Chicken)

Method

For Som Tum (Green Papaya Salad)

  1. 1

    Prepare the Salad Base

In a large mixing bowl, combine shredded green papaya, shredded carrot, halved cherry tomatoes, and cut green beans.

  2. 2

    Make the Dressing

In a separate small bowl, whisk together lime juice, fish sauce, palm sugar, minced garlic, and smashed Thai bird chilies until the sugar is dissolved.

  3. 3

    Combine and Toss

Pour the dressing over the salad base and toss well to combine. Adjust seasoning with extra lime juice or fish sauce if desired.

  4. 4

    Garnish

Sprinkle the crushed roasted peanuts on top and mix gently before serving.

For Gai Yang (Grilled Chicken)

  1. 5

    Marinate the Chicken

In a bowl, mix together minced garlic, minced coriander root, soy sauce, fish sauce, sugar, black pepper, lime juice, and vegetable oil to create a marinade. Add the chicken thighs and coat them well. Allow to marinate in the refrigerator for at least 30 minutes.

  2. 6

    Preheat the Grill

Preheat your grill to medium-high heat.

  3. 7

    Grill the Chicken

Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.

  4. 8

    Rest and Serve

Once cooked, let the chicken rest for a few minutes before slicing. Serve alongside the Som Tum salad.
