Preparation

    Soak the rice noodles in hot water for 20-30 minutes until softened. Drain and set aside.

    Prepare all proteins (shrimp, chicken, or tofu) by cutting them into bite-sized pieces.

    Chop the green onions, julienne the carrots, and slice the bell pepper.

Cooking

    Stir-fry the Proteins

    In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp and chicken (if using) and cook until they are cooked through, about 3-5 minutes. If using tofu, add it and cook until golden brown. Remove from the pan and set aside.

    Sauté Vegetables

    In the same pan, add another tablespoon of vegetable oil. Add carrots, bell pepper, and green onions. Sauté for 2-3 minutes until just tender.

    Add Noodles and Sauce

    Push the vegetables to one side of the pan and add the soaked rice noodles. Pour in the soy sauce, fish sauce, brown sugar, tamarind paste, and lime juice. Mix everything together and cook for another 2-3 minutes.

    Add Eggs

    Create a well in the center of the noodles and pour in the beaten eggs. Stir continuously until the eggs are fully cooked and mixed in.

    Combine Everything

    Add the cooked proteins back into the pan along with the bean sprouts. Stir well and cook for an additional minute.

Serving

    Serve the Pad Thai hot, garnished with crushed peanuts, chopped cilantro, salt, and pepper to taste. Enjoy!
