    Prepare the noodles

    Soak the thin rice noodles in hot water for about 20-30 minutes until soft. Drain and set aside.

    Chop the vegetables

    Thinly slice the scallions, onion, and bell pepper. Chop the tomato into wedges. Mince the garlic.

    Prepare the sauce

    In a small bowl, combine soy sauce, oyster sauce, fish sauce, chili paste, and sugar. Stir well and set aside.

    Heat the oil

    In a large wok or skillet, heat vegetable oil over medium-high heat.

    Stir-fry the vegetables

    Add minced garlic, sliced onion, and bell pepper to the hot oil. Stir-fry for 2-3 minutes until the vegetables are slightly tender.

    Add noodles and sauce

    Add the soaked rice noodles to the wok along with the prepared sauce. Toss everything together to combine well.

    Finish with basil and bean sprouts

    Add the bean sprouts, scallions, and fresh basil leaves into the wok. Stir-fry for another 2-3 minutes until everything is heated through and well mixed.

    Serve

    Remove from heat and serve hot. Garnish with extra basil if desired.
