For the Sticky Rice

For the Coconut Sauce

Method

Preparing the Sticky Rice

  1. 1

    Soak the Rice

Rinse 1 cup of glutinous rice under cold water until the water runs clear. Soak the rice in enough water to cover it for at least 4 hours or overnight.

  2. 2

    Steam the Rice

Drain the soaked rice and place it in a steamer basket lined with cheesecloth. Steam the rice for about 30-40 minutes until it's tender and sticky.

Making the Coconut Sauce

  1. 3

    Combine Ingredients

In a saucepan, combine 1 cup of coconut milk, 1 tablespoon of sugar, and 1 teaspoon of salt. Heat over medium heat until the sugar dissolves.

  2. 4

    Thicken the Sauce

In a small bowl, mix 1 tablespoon of cornstarch with 2 tablespoons of water to create a slurry. Slowly add this mixture to the saucepan while stirring continuously until the sauce thickens. Remove from heat and set aside.

Assembling the Dish

  1. 5

    Slice the Mangoes

Peel and slice the ripe mangoes into thin strips or wedges.

  2. 6

    Serve

On a plate, place a portion of sticky rice, drizzle with the coconut sauce, and arrange the sliced mangoes on the side. Optionally, sprinkle with sesame seeds or mung beans and garnish with mint leaves.
