Dough Preparation

Make the Dough
In a mixing bowl, combine the all-purpose flour and salt. Gradually add water while mixing until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for at least 30 minutes.

Prepare Pork Filling
In a large bowl, mix ground pork, chopped green onions, minced garlic, minced ginger, soy sauce, sesame oil, salt, and pepper until well combined. Set aside.

Prepare Vegetable Filling
In another bowl, combine finely chopped cabbage, grated carrot, chopped mushrooms, chopped green onions, minced garlic, minced ginger, soy sauce, sesame oil, salt, and pepper. Mix well and set aside.
Gyoza Assembly

Shape the Gyoza
Roll the rested dough into a thin sheet on a floured surface. Cut out circles (about 3 inches in diameter) using a cookie cutter or glass. Place a teaspoon of filling in the center of each circle. Fold the dough over the filling to create a half-moon shape and pinch the edges to seal. Make pleats along the edges for a decorative touch.

Cook the Gyoza
In a large skillet, heat a tablespoon of oil over medium heat. Arrange the gyoza in the skillet, flat side down. Cook until the bottoms are golden brown (about 3-4 minutes). Carefully add 1/4 cup of water to the skillet and cover immediately. Steam for about 5-7 minutes or until the water has evaporated and gyoza are cooked through.

In a small bowl, mix soy sauce, rice vinegar, chili oil, and sesame seeds. Adjust seasoning to taste.
