Tofu Preparation

Press and Cut Tofu
Wrap the firm tofu in a clean kitchen towel and place a heavy object on top for about 30 minutes to remove excess moisture. After pressing, cut the tofu into 1-inch cubes.

Coat Tofu in Cornstarch
In a medium bowl, mix cornstarch and salt. Toss the tofu cubes in the cornstarch mixture until evenly coated.

Fry Tofu
Carefully add the coated tofu cubes to the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and crispy, about 3-4 minutes per side. Remove with a slotted spoon and drain on paper towels.
Sweet and Sour Sauce

Prepare Sauce Mixture
In a small saucepan, combine ketchup, rice vinegar, soy sauce, brown sugar, pineapple juice, cornstarch, and water. Whisk until smooth.

Cook Sauce
Bring the mixture to a simmer over medium heat, stirring continuously until the sauce thickens, about 5-7 minutes.
