Preparing the Ice Cream

Scoop the Ice Cream
Use an ice cream scoop to form 4 evenly sized scoops of vanilla ice cream and place them on a baking sheet lined with parchment paper.

Cover the scoops with plastic wrap and freeze for at least 2 hours or until they are solid.

In a medium bowl, whisk together 1 cup of all-purpose flour, 1 large egg, 1 cup of milk, 1 tsp of vanilla extract, and 2 tbs of sugar until smooth.

In a food processor, pulse the cornflakes and coconut flakes together until they are finely crushed. Place them in a shallow dish.
