Pastry Dough Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add cold water, mixing until the dough comes together. Form into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes.

    Cook the Filling

    In a skillet, heat the oil over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent. Add the diced potato and cook for about 5 minutes. If using chicken, add it now and cook until no longer pink. Stir in curry powder, turmeric, salt, and black pepper. Cook for another 5 minutes until the potatoes are tender. Remove from heat and let it cool.

    Assemble the Curry Puffs

    Preheat the oven to 400°F (200°C). Roll out the chilled dough on a floured surface to about 1/8 inch thickness. Cut into circles (about 4 inches in diameter). Place a tablespoon of the filling in the center of each circle. Fold the dough over to form a half-moon shape and press the edges to seal. Use a fork to crimp the edges if desired.

    Bake the Curry Puffs

    Place the assembled curry puffs on a baking sheet lined with parchment paper. Brush the tops with a little melted butter for a golden finish. Bake in the preheated oven for 20-25 minutes or until golden brown.

    Serve the curry puffs hot with sliced cucumber and radish on the side.
