Preparing the Calamari

Clean and Cut Calamari
If using whole calamari, clean and slice them into rings. Rinse under cold water and pat dry with paper towels.

Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and garlic powder. Mix well until evenly combined.

Prepare Batter
Gradually add cold water to the dry ingredient mixture, whisking until smooth. The batter should be thick enough to coat the calamari rings.

Coat Calamari
Dip each calamari ring into the batter, allowing excess to drip off, and carefully place them in the hot oil.

Fry Calamari
Fry the calamari in batches for 2-3 minutes or until golden brown and crispy. Do not overcrowd the pan.

Drain
Remove the fried calamari with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Sprinkle with additional salt if desired.
Preparing Sweet Chili Sauce

Mix Sauce Ingredients
In a small bowl, combine the sweet chili sauce and lime juice. Stir until well mixed.

Serve the calamari hot, garnished with chopped cilantro and a side of the sweet chili sauce for dipping.
