Dumpling Dough Preparation

Mix the Dough
In a large mixing bowl, combine the tapioca flour and salt. Gradually add the hot water, stirring continuously until a sticky dough forms.

Knead the Dough
Once the dough is cool enough to handle, knead it on a lightly floured surface for about 5 minutes until it becomes smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.

Roll Out the Dough
Divide the rested dough into small pieces (about the size of a golf ball). Roll each piece into a flat circle about 3 inches in diameter.

Fill the Dumplings
Place about 1 tablespoon of the chive filling in the center of each dough circle. Fold the dough over to create a half-moon shape and pinch the edges to seal.
Cooking the Dumplings

Boil the Dumplings
Bring a large pot of water to a boil. Carefully drop the dumplings into the boiling water in batches. Cook for about 5-7 minutes or until they float to the surface.

Serve
Remove the dumplings with a slotted spoon and serve hot, drizzled with extra soy sauce or sesame oil if desired.
