Marinade Preparation

    Prepare the Chicken

    Cut the chicken breast into bite-sized pieces and place them in a mixing bowl.

    Make the Marinade

    In a separate bowl, combine coconut milk, soy sauce, brown sugar, ground coriander, ground cumin, grated ginger, minced garlic, lime juice, salt, and black pepper. Whisk until well blended.

    Marinate the Chicken

    Pour the marinade over the chicken pieces, ensuring they are fully coated. Cover the bowl and let it marinate in the refrigerator for at least 1 hour (or up to overnight for best flavor).

Peanut Sauce Preparation

    In a saucepan, add the peanut butter, coconut milk, soy sauce, lime juice, brown sugar, chili flakes, and water.

    Cook the Sauce

    Heat the mixture over medium heat, stirring continuously until the sauce is smooth and heated through. Adjust the consistency with more water if necessary. Set aside.

Skewering and Grilling

    If using wooden skewers, soak them in water for 30 minutes to prevent burning. Preheat the grill or grill pan to medium-high heat.

    Thread the marinated chicken pieces onto the skewers, leaving some space between each piece for even cooking.
