Prepare Meatballs

Mix Ingredients
In a bowl, combine ground beef, minced garlic, fish sauce, black pepper, and sugar. Mix well until all ingredients are incorporated.

Form Meatballs
Shape the mixture into small meatballs, about 2.5 cm in diameter. Set aside.
Prepare Broth

Simmer
Once boiling, reduce heat and let the broth simmer for about 10 minutes to allow flavors to meld.
Cook Meatballs

Add Meatballs
Carefully add the prepared meatballs to the simmering broth. Cook for about 10 minutes or until meatballs are cooked through.
Cook Noodles and Vegetables

Prepare Noodles
While the meatballs are cooking, prepare the rice noodles according to package instructions. Drain and set aside.

Blanch Chinese Broccoli
In a separate pot, bring water to a boil and blanch the Chinese broccoli for 2-3 minutes until bright green. Drain and set aside.
Assemble Soup

Layer Ingredients
In serving bowls, place a portion of rice noodles, followed by the blanched Chinese broccoli, and then ladle the hot broth with meatballs over the top.

Top each bowl with bean sprouts, fresh basil leaves, chopped scallions, chopped cilantro, and chicharrons.
