    Prepare the Ingredients

    Chop the tomatoes, garlic, shallots, green onions, and cilantro. Soak the dried red chilies in warm water for 10 minutes, then drain.

    Make the Chili Paste

    In a blender, combine the soaked dried red chilies, garlic, shallots, and a little water. Blend until smooth to create a chili paste.

    Cook the Pork

    In a large skillet over medium heat, add the ground pork and cook until browned, breaking it up with a spatula.

    Add the Sauce

    Add the chili paste to the browned pork and stir well. Add the tomatoes, fish sauce, and sugar. Simmer for about 10-15 minutes until the sauce thickens.

    Cook the Rice

    While the pork is cooking, prepare the jasmine rice according to package instructions.
