    Marinate the Wings

    In a large bowl, combine chicken wings and fish sauce. Mix well to ensure all wings are coated. Cover and refrigerate for at least 1 hour, or overnight for best results.

    Prepare the Coating

    In a separate bowl, mix Thai rice flour, baking powder, salt, and ground black pepper. Stir until well combined.

    Heat the Oil

    In a deep frying pan or wok, heat the vegetable oil over medium-high heat until hot (about 180°C or 350°F).

    Coat the Wings

    Remove the marinated wings from the refrigerator. Take each wing and coat it in the rice flour mixture, shaking off any excess.

    Fry the Wings

    Carefully place the coated wings in the hot oil, making sure not to overcrowd the pan. Fry in batches for about 8-10 minutes or until golden brown and crispy. Remove and drain on paper towels.

    Prepare Jim Jeaw Sauce

    In a small bowl, combine chili flakes, lime juice, fish sauce, and palm sugar. Stir until the sugar is dissolved.
