Prepare the Filling
In a bowl, combine the shredded cabbage, julienned carrot, fresh mint leaves, and lettuce. If using tofu, slice it into thin strips.

Make the Sauce
In a small bowl, mix the peanut butter, sweet chili sauce, soy sauce, and water until smooth. Adjust with chili flakes to taste.

Soften Rice Paper
Fill a shallow dish with warm water. Dip one rice paper wrapper in the water until softened, about 10-15 seconds. Lay it flat on a clean surface.
Rolling the Spring Rolls

Assemble the Rolls
Place a small amount of the filling (cabbage, carrot, mint, lettuce, and tofu or pork) in the center of the rice paper. Fold the sides inward and then roll from the bottom up, tightly but gently.

Continue the process with the remaining rice paper wrappers and filling.

Arrange the spring rolls on a platter and serve with the prepared peanut sauce on the side.
