Preparation of Soup Base

    Prepare the Aromatics

    Smash the lemongrass stalks with the back of a knife to release their flavor. Slice the galangal into thin pieces.

    Simmer the Broth

    In a large pot, combine 4 cups of water and 2 cups of chicken or vegetable broth. Add the smashed lemongrass, sliced galangal, kaffir lime leaves, and whole chilies. Bring to a boil over medium heat.

    Season the Broth

    Once boiling, lower the heat and let it simmer for about 10 minutes to allow the flavors to meld.

    Add Fish Sauce and Lime Juice

    Stir in the fish sauce and lime juice, adjusting to taste. Keep the broth simmering.

Cooking the Soup

    Add Vegetables

    Add the sliced mushrooms and quartered tomatoes to the pot, cooking for about 5 minutes until they soften.

    Add Shrimp

    Add the peeled and deveined shrimp to the pot and cook until they turn pink, about 3-5 minutes.

    Finish and Serve

    Remove from heat, discard the lemongrass stalks and lime leaves. Ladle the soup into bowls, garnish with chopped cilantro, and serve hot.
