Method
Preparing the Chicken Satay
Marinate the Chicken
Cut the chicken breast into thin strips. In a bowl, combine soy sauce, brown sugar, ground coriander, ground cumin, minced garlic, lime juice, and vegetable oil. Add the chicken strips to the marinade, ensuring they are coated evenly. Cover and refrigerate for at least 1 hour, or overnight for better flavor.
Prepare the Skewers
If using wooden skewers, soak them in water for about 30 minutes to prevent burning on the grill. This step is optional if using metal skewers.
Skewer the Chicken
Thread the marinated chicken strips onto the skewers, leaving a little space between each piece to ensure even cooking.
Making the Peanut Sauce
Combine Ingredients
In a small saucepan, combine the creamy peanut butter, coconut milk, soy sauce, brown sugar, lime juice, minced garlic, and red pepper flakes.
Cook the Sauce
Heat the saucepan over medium-low heat, stirring constantly until the mixture is smooth and heated through. If the sauce is too thick, add a little more coconut milk to reach desired consistency.
Serve
Remove the sauce from heat and let it cool slightly. Serve the grilled chicken skewers with the warm peanut sauce for dipping.
