Chicken Preparation

    Marinate the Chicken

    Cut the chicken breast into bite-sized pieces. In a mixing bowl, combine soy sauce, lime juice, minced garlic, minced ginger, brown sugar, coconut milk, and salt. Add the chicken pieces to the marinade and mix until well-coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.

    Prepare Skewers

    If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill. If using metal skewers, ensure they are clean and ready for use.

Grilling

    Skewer the Chicken

    Thread the marinated chicken pieces onto the skewers, leaving a small gap between each piece for even cooking.

    Preheat the Grill

    Preheat your grill to medium-high heat. Ensure the grill grates are clean and lightly oiled to prevent sticking.

    Grill the Skewers

    Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 75°C (165°F).

    Make the Peanut Sauce

    In a small saucepan over low heat, combine peanut butter, soy sauce, lime juice, honey, and water. Stir continuously until the mixture is smooth and heated through. If the sauce is too thick, add more water until desired consistency is reached. Stir in red chili flakes and season with salt to taste.
