Prepare the Potatoes

Preheat your oven to 400°F (200°C). Scrub the russet potatoes under running water and dry them with a towel. Prick each potato several times with a fork to allow steam to escape.

Bake the Potatoes

Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until they are tender when pierced with a fork. Remove from the oven and allow to cool slightly.

Scoop Out the Flesh

Once the potatoes are cool enough to handle, cut each potato in half lengthwise. Carefully scoop out the insides, leaving about 1/4 inch of potato around the skin. Save the scooped-out potato for another use, like mashed potatoes.

Season and Oil the Skins

Brush the insides of the potato skins with olive oil and sprinkle with salt and pepper.

Bake the Skins Again

Place the potato skins cut-side down on a baking sheet and bake for an additional 10-15 minutes, or until they are crispy.

Add Toppings

Remove the skins from the oven, flip them over, and sprinkle shredded cheddar cheese and crumbled bacon into each skin. Return to the oven and bake for an additional 5-10 minutes, until the cheese is melted and bubbly.

Serve

Remove from the oven and garnish with sliced green onions. Serve warm with sour cream on the side.
