For the Tiramisu
Method
Preparation of the Tiramisu
- 1
Prepare the Coffee
Brew 300 ml of strong coffee and allow it to cool. You can also add a splash of coffee liqueur for extra flavor if desired.
- 2
Mix the Egg Yolks and Sugar
In a large mixing bowl, whisk together 4 egg yolks and 100 g of granulated sugar until the mixture becomes pale and creamy.
- 3
Add Mascarpone and Vanilla
Gently fold in 500 g of mascarpone cheese and 1 tsp of vanilla extract into the egg yolk mixture until smooth and well combined.
- 4
Whip the Cream
In a separate bowl, whip 250 ml of heavy cream until stiff peaks form. Carefully fold the whipped cream into the mascarpone mixture until fully incorporated.
- 5
Prepare the Ladyfingers
Dip each ladyfinger biscuit (200 g) briefly into the cooled coffee, ensuring they absorb the coffee but do not become soggy.
- 6
Layer the Tiramisu
In a rectangular dish, arrange a layer of soaked ladyfingers at the bottom. Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of soaked ladyfingers and top with the remaining mascarpone mixture.
- 7
Chill the Tiramisu
Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the dessert to set.
- 8
Serve
Before serving, dust the top with 30 g of cocoa powder and garnish with grated dark chocolate (30 g). Slice and serve chilled.
