    Prepare the Marinade

    In a medium bowl, combine the buttermilk with the calamari rings. Ensure all the rings are coated well. Cover and refrigerate for at least 30 minutes.

    Mix the Dry Ingredients

    In a separate bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika until well combined.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Calamari

    Remove the calamari from the refrigerator. Take each ring and coat it in the flour mixture, shaking off any excess flour.

    Fry the Calamari

    Carefully add the coated calamari rings to the hot oil in batches, being careful not to overcrowd the pot. Fry for 2-3 minutes, or until golden brown. Use a slotted spoon to remove the calamari and place them on a paper towel-lined plate to drain.

For the Marinara Sauce

    Cook the Sauce

    In a saucepan over medium heat, add the olive oil and minced garlic. Sauté for 1-2 minutes until fragrant, but do not let the garlic burn.

    Combine Ingredients

    Add the canned crushed tomatoes, dried oregano, salt, black pepper, and sugar to the saucepan. Stir well to combine.

    Simmer the Sauce

    Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally. Stir in the fresh basil before serving.
