Method

Prepare the Chocolate Lava Cake

    Preheat the Oven

    Preheat your oven to 425°F (220°C). Grease four ramekins with butter and lightly dust with flour, tapping out the excess.

    Melt Chocolate and Butter

    In a medium saucepan, melt the butter and chocolate chips over low heat, stirring continuously until smooth and well combined. Remove from heat and let it cool slightly.

    Mix Ingredients

    In a large mixing bowl, whisk together the eggs, egg yolks, granulated sugar, and vanilla extract until well combined. Gradually add the chocolate mixture, stirring until smooth.

    Add Flour and Salt

    Fold in the flour and a pinch of salt until just combined. Do not overmix.

    Fill Ramekins

    Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

    Bake

    Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

    Cool Slightly

    Remove from the oven and let the cakes cool in the ramekins for about 1 minute.

    Unmold the Cakes

    Carefully run a knife around the edges of each ramekin to loosen the cake. Invert onto individual plates.

Serve

    Add Ice Cream

    Top each chocolate lava cake with a scoop of vanilla ice cream.

    Dust with powdered sugar and add fresh berries if desired.
