Method

Cooking Pasta

    Boil Water

    In a large pot, bring salted water to a rolling boil over high heat.

    Cook Pasta

    Add the pasta to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain Pasta

    Once cooked, drain the pasta in a colander and set aside, reserving about half a cup of pasta water.

Preparing Vegetables

    Sauté Vegetables

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

    Add Vegetables

    Add bell pepper, zucchini, cherry tomatoes, carrot, and broccoli to the skillet. Sauté for about 5-7 minutes until vegetables are tender but still crisp.

Combining Ingredients

    Combine Pasta and Vegetables

    Add the drained pasta to the skillet with the sautéed vegetables. Toss gently to combine.

    Adjust Seasoning

    Add reserved pasta water little by little until desired consistency is reached. Season with salt and black pepper to taste.

    Serve

    Remove from heat, sprinkle with grated Parmesan cheese, and serve immediately.
