Calamari Preparation

Prepare the Calamari
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder.

Coat the Calamari
Dip the calamari rings into the beaten eggs, allowing any excess to drip off, and then dredge them in the flour mixture, ensuring they are well coated.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Fry the coated calamari in batches for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Add Tomatoes and Seasonings
Stir in the crushed tomatoes, oregano, basil, sugar, salt, and black pepper. Bring to a simmer.

Let the sauce simmer for 15-20 minutes, stirring occasionally until it thickens slightly. Adjust seasoning as needed.
