Wine Making Process

Harvesting
Harvest Touriga Franca grapes from the Douro Valley when they reach optimal ripeness.

Crushing
Gently crush the grapes to release their juices into a fermentation vessel.

Fermentation
Add yeast to the grape juice and allow it to ferment for about 10-14 days at controlled temperatures.

Pressing
Once fermentation is complete, press the mixture to separate the liquid from the solids.

Clarification
Allow the wine to settle, and then siphon off the clear liquid, leaving the sediment behind.

Aging
Age the wine in stainless steel or neutral oak barrels for several months to develop its flavors.

Bottling
Filter and bottle the wine, adding sulfur dioxide to stabilize it.
