Steak Preparation

    Season the Steak

    Generously season the Wagyu Denver steaks with salt and black pepper on both sides.

    Sear the Steak

    Heat olive oil in a skillet over medium-high heat. Sear the steaks for about 4-5 minutes on each side for medium-rare, or until desired doneness.

    Rest the Steak

    Remove the steaks from the skillet and let them rest for at least 5 minutes before slicing.

Creamed Spinach

    Cook the Spinach

    In a large pot, bring water to a boil. Blanch the spinach for 2-3 minutes until wilted, then drain and chop.

    Make the Cream Mixture

    In a saucepan, combine heavy cream, cream cheese, minced garlic, and nutmeg. Heat over medium until the cream cheese is melted and the mixture is smooth.

    Combine and Season

    Add the chopped spinach to the cream mixture. Stir to combine and season with salt and black pepper to taste.

Hen of the Woods Mushrooms

    Sauté the Mushrooms

    In a skillet, melt butter over medium heat. Add minced garlic and thyme, then add the Hen of the Woods mushrooms.

    Cook Until Tender

    Sauté the mushrooms for about 8-10 minutes, until they are golden and tender. Season with salt and black pepper to taste.

Bordelaise Sauce

    Reduce the Wine

    In a saucepan, add red wine and shallots. Bring to a boil and reduce until the mixture is syrupy, about 10 minutes.

    Add Beef Stock

    Add beef stock to the reduced wine. Simmer until the sauce thickens, about 15 minutes.

    Finish the Sauce

    Whisk in butter and season with salt and black pepper to taste before serving.
