Preparation

    Prepare the Chicken

    Preheat your oven to 220°C (450°F). Pat the whole chicken dry with paper towels. Rub the chicken all over with olive oil, salt, and black pepper. Insert crushed garlic cloves and lemon wedges into the cavity of the chicken. Sprinkle fresh thyme over the chicken.

    Roasting

    Place the chicken breast side up in a roasting pan. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 75°C (165°F) and the juices run clear. Baste the chicken with its own juices halfway through cooking.

Vegetable Preparation

    Sauté the Vegetables

    While the chicken is roasting, heat a tablespoon of olive oil in a large skillet over medium heat. Add the beech mushrooms and sauté until soft, about 5 minutes. Add the Swiss chard and cook until wilted, another 3 minutes. Season with salt and pepper to taste.

Serving

    Serve the Dish

    Once the chicken is done, remove it from the oven and let it rest for 10 minutes. Carve the chicken and serve it alongside the sautéed Swiss chard and beech mushrooms. Drizzle crème fraîche over the top and enjoy!
