Wine Making Process

Harvesting
Harvest the Sauvignon Blanc grapes at optimal ripeness, typically in late summer to early fall.

Crushing
Gently crush the grapes to release the juice while keeping the skins intact.

Fermentation
Transfer the juice to a fermentation tank and add yeast. Allow fermentation to occur at a controlled temperature for approximately 2-3 weeks.

After fermentation, rack the wine off the sediment into a clean tank, leaving the lees behind.

Aging
Aging the wine in stainless steel or neutral oak barrels for 4-6 months to develop flavor and complexity.

Bottling
Once aged, filter and bottle the wine, ensuring to add sulfites to stabilize the wine.

Label the bottles with the 2022 vintage and indicate the region, Südsteiermark, Austria.
