Cooking Instructions

  1. 1

    Prepare the Swordfish

Preheat your oven to 400°F (200°C). Season the swordfish steaks with olive oil, lemon juice, salt, and black pepper. Place them on a baking sheet.

  2. 2

    Roast the Swordfish

Roast the swordfish in the preheated oven for about 15-20 minutes, or until the fish is opaque and flakes easily with a fork.

  3. 3

    Cook the Pole Beans

While the swordfish is roasting, bring a pot of salted water to a boil. Add the pole beans and cook for about 4-5 minutes until tender but still crisp. Drain and set aside.

  4. 4

    Prepare the Artichokes

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add the canned artichoke hearts and cook until heated through, about 3-4 minutes. Season with salt and pepper.

  5. 5

    Soft-Boil the Eggs

In a separate pot, bring water to a boil. Gently add the eggs and boil for 6-7 minutes for a soft yolk. Remove and place in an ice bath to stop cooking. Once cooled, peel the eggs.

  6. 6

    Assemble the Dish

On a plate, place the roasted swordfish, topped with the sautéed artichokes and pole beans. Cut the soft-boiled eggs in half and place on top. Garnish with chopped parsley.
