Preparation

Prepare the Seafood
Season the American Red Snapper fillets with salt and black pepper on both sides. Set aside. Rinse the diver scallops and pat them dry with paper towels.

Prepare the Vegetables
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced summer squash and sauté for about 4-5 minutes until tender. Add the roasted red bell peppers and sauté for another 2 minutes. Season with salt and pepper to taste. Remove from heat and set aside.

Cook the Scallops
In the same skillet, add another tablespoon of olive oil and heat over medium-high heat. Add the diver scallops and sear for about 2-3 minutes on each side until golden brown. Remove from the skillet and keep warm.

Cook the Snapper
In the same skillet, add the remaining tablespoon of olive oil. Place the American Red Snapper fillets skin-side down and cook for about 4-5 minutes. Carefully flip the fillets and cook for another 3-4 minutes until the fish is cooked through and flakes easily with a fork.

Finish with Saffron
Dissolve the saffron threads in a tablespoon of warm water. Drizzle the saffron water over the cooked snapper and let it sit for a minute to absorb the flavor.
Serving

Plate the Dish
On each plate, layer the sautéed summer squash and roasted peppers first, then place the cooked American Red Snapper on top. Add a few scallops beside the fish. Serve warm.
