    Prepare the Chicken

    Season the boneless chicken thighs with salt, black pepper, garlic powder, onion powder, and paprika. Make sure to coat them evenly.

    Chop Vegetables

    Dice the onion and mince the garlic cloves. Set aside.

    Prepare the Okra

    Wash the okra thoroughly and slice it into 1/2 inch pieces.

Cooking

    Sauté Chicken

    In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken thighs and cook for about 5-6 minutes on each side until golden brown. Remove from skillet and set aside.

    Cook Vegetables

    In the same skillet, add diced onion and sauté for 2-3 minutes until translucent. Then add minced garlic and cook for an additional minute until fragrant.

    Add Okra and Liquid

    Stir in the sliced okra, diced tomatoes, and chicken broth. Bring the mixture to a simmer.

    Combine Chicken and Simmer

    Return the seared chicken thighs to the skillet. Cover and let simmer for about 20 minutes, allowing the flavors to meld and the chicken to cook through.

    Once cooked, garnish with fresh parsley. Serve hot over rice or with crusty bread.
