    Prepare the ingredients

    Chop the onion, carrots, celery, and garlic. Set aside.

    Season the short ribs

    Pat the short ribs dry with paper towels and season them with salt and black pepper on all sides.

Cooking

    Sear the short ribs

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the short ribs and sear until browned on all sides, about 8-10 minutes. Remove the short ribs and set aside.

    Sauté the vegetables

    In the same pot, add the chopped onion, carrot, celery, and garlic. Sauté for about 5 minutes until the vegetables are softened.

    Deglaze the pot

    Pour in the red wine, scraping the bottom of the pot to release any browned bits. Let it simmer for about 3-4 minutes.

    Add broth and herbs

    Return the short ribs to the pot. Add the beef broth, thyme, and bay leaf. Bring to a boil.

    Simmer

    Reduce the heat to low, cover the pot, and let it simmer for 2-3 hours, or until the short ribs are tender.

Serving

    Garnish and serve

    Once the short ribs are tender, remove them from the pot and shred the meat. Serve in a bowl, garnished with fresh parsley.
