    Wash Spinach

    Rinse the fresh spinach under cold running water to remove any dirt or debris. Drain well and pat dry with a paper towel.

    Whisk Eggs

    In a medium bowl, crack the eggs and add the milk, salt, and black pepper. Whisk together until the mixture is well combined and frothy.

Cooking

    Sauté Spinach

    In a non-stick skillet, melt the butter over medium heat. Add the spinach and sauté for about 2-3 minutes, or until the spinach is wilted and tender. Remove from heat and set aside.

    Cook Omelette

    Pour the egg mixture into the skillet over low heat. Allow the eggs to set for about 2 minutes without stirring. Then, gently lift the edges with a spatula to allow uncooked egg to flow underneath.

    Once the eggs are nearly set, add the sautéed spinach evenly over one half of the omelette. If using, sprinkle the grated cheese and chopped tomatoes over the spinach.
