    Prepare the Rabbit

    Rinse the rabbit pieces under cold water and pat them dry with paper towels. Season all sides with salt and black pepper.

    Chop the Vegetables

    Chop the onion, mince the garlic, slice the carrots, and chop the celery stalks.

Cooking

    Brown the Rabbit

    In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the seasoned rabbit pieces and brown them on all sides, about 5-7 minutes. Remove the rabbit and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté until the vegetables are tender, about 5-6 minutes.

    Add Broth and Herbs

    Return the rabbit to the pot. Pour in the chicken broth and add thyme and bay leaves. Bring to a boil, then reduce the heat to low, cover, and let simmer for about 45 minutes.

    Thicken the Sauce

    After 45 minutes, remove the rabbit pieces again and set aside. Whisk the flour into the cooking liquid to thicken it, then stir in the heavy cream. Let it simmer for another 5 minutes.

    Combine and Serve

    Return the rabbit to the pot, coating it with the creamy sauce. Cook for an additional 5 minutes to heat through. Garnish with chopped parsley before serving.
