    Prep the Vegetables

    Peel and chop the onions, garlic, carrots, and potatoes. Set aside.

    Season the Beef

    Rub the grass-fed beef chuck roast with salt, black pepper, dried thyme, and dried rosemary.

Cooking

    Sear the Beef

    In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Add the seasoned beef roast and sear for about 3-4 minutes on each side until browned. Remove from the skillet and set aside.

    Cook the Onions and Garlic

    In the same skillet, add chopped onions and garlic. Sauté for about 5 minutes, until the onions become translucent.

    Add Carrots and Broth

    Add the chopped carrots to the skillet. Pour in the beef broth and bring to a simmer, scraping any browned bits from the bottom of the pan.

    Combine and Cook

    Return the seared beef roast to the skillet. Add the bay leaves and arrange the chopped potatoes around the beef. Cover and reduce the heat to low. Let it cook for 2 to 2.5 hours, or until the beef is tender.

    Once cooked, taste and adjust the seasoning with additional salt and pepper as needed. Remove bay leaves before serving.
